Inulase, also known as inulase, has the scientific name (β-2, 1-D-frucanase), is also called (β -frucanase), or [2, 1-D-frucanase hydrolase (EC3.2.1)]. It is a polysaccharide hydrolase that can hydrolyze the fructosidic bonds of (β-2, 1-D-fructan). Inulinase is a type of hydrolase capable of hydrolyzing the β-2, l-d polysaccharide glycosidic bond. Microorganisms that secrete inulinase are widely distributed in nature, and various microorganisms in soil, water, and the digestive tracts of animals can secrete it. Inulinase can hydrolyze inulin into fructose or fructooligosaccharides under certain temperature conditions.
