According to the different ways of substrate action, or in other words, according to the way inulinase cleaves pectin chains, it can be divided into endonucleases (ec3.2.1.7) and exonucleases (ec3.2.1.80). Usually, the size of i/s is used to distinguish between endocytic and exolytic inulinases, where i is the enzyme activity when using inulin as a substrate and s is the enzyme activity when using sucrose as a substrate. It is generally believed that the i/s value of exonuclease is lower than that of endonuclease. Enzymatic hydrolysis of inulin can yield high-purity oligofructose, which is often isolated from fungi. Exogenous inulinase is distributed inside, on the cell wall, and outside the cell, and it hydrolyzes inulin to obtain high-purity fructose.
